Abstract

Kantin sehat dan halal di lingkungan universitas berperan strategis dalam menyediakan pangan bergizi sekaligus membentuk perilaku konsumsi sehat mahasiswa. Namun, rendahnya pemahaman pengelola dan pengguna kantin terkait gizi seimbang, keamanan pangan, dan kehalalan menunjukkan perlunya intervensi pengabdian masyarakat yang terstruktur dan partisipatif. Program ini bertujuan mengoptimalkan fungsi kantin sehat dan halal di UIN Sunan Ampel Surabaya melalui peningkatan kapasitas pengelola kantin dan mahasiswa. Program pengabdian masyarakat dilaksanakan menggunakan pendekatan Community-Based Research (CBR) dengan desain kuasi-eksperimental one-group pretest–posttest pada Juli–November 2025. Kegiatan mencakup pelatihan, edukasi gizi, implementasi menu sehat dan halal, serta monitoring dan evaluasi pada 39 unit kantin, dengan evaluasi kuantitatif melibatkan 30 peserta. Hasil evaluasi menunjukkan peningkatan signifikan skor pengetahuan dari rerata 18,80 menjadi 20,70 (Δmean = +1,90; p = 0,003) serta skor sikap dari 13,43 menjadi 14,87 (Δmean = +1,44; p < 0,001) pengelola kantin dan mahasiswa setelah intervensi. Perubahan kognitif dan afektif tersebut diikuti dengan penerapan menu sehat dan halal pada sekitar 70–80% kantin kampus. Temuan ini menegaskan bahwa intervensi edukatif berbasis komunitas efektif mendorong perubahan pengetahuan, sikap, dan praktik pengelolaan kantin, serta memberikan dasar empiris bagi pengembangan kebijakan kantin sehat dan halal yang berkelanjutan di perguruan tinggi.
